Taco Wagon – Authentic, Mobile Mexican in Springfield

I made a lot of trips to Mexico during my college years (real Mexico – not Cancun) and quickly fell in love with the taco stands. No-frills, melt-in-your-mouth goodness that has been hard to find around Southwest Missouri. Until now. Having heard great things about a new taco stand right here in Springfield, I was anxious to check it out for myself.
The Taco Wagon did not disappoint. Located in a parking lot at the northwest corner of the intersection of W. Sunshine and Zimmer (the light to turn into the Walmart Supercenter), this storage shed on wheels is cranking out a nice selection of Mexican staples. Tacos, burritos, quesadillas, and tamales, plus a large selection of Mexican sodas. If you’ve never had an authentic Mexican taco, then let me tell you, the meat is where it’s at. Anyone can toss on some cheese, onions, cilantro, salsa, etc., but not everyone can get the meat right. The other thing you should know is Mexican tacos are not the same size as Taco Bell’s. Mexican tacos are made with small, soft corn tortillas and don’t come with cheese or sour cream by default. Don’t be surprised if you can eat three or four.
The Taco Wagon offers chicken, pork, steak, and shrimp. I tried the chicken, pork, and steak tacos ($1.25 each); my husband ordered a large chicken quesadilla ($5.50). I will have to say, the pork was the big winner. The steak was good and the chicken was fine (nothing special), but the pork was right on. Known as Tacos Adobada in Mexico, pork tacos are definitely my favorite, and I was pleased that the Taco Wagon held up to my expectations. (Confession: I added cheese to my tacos for $0.25/taco – no cheese is probably my only complaint against Mexican tacos.) The quesadilla was more American-style, but it was still good and gooey, loaded with cheese, and huge! We brought home leftovers.
Taco Wagon opened in January, 2010, and is typically open every day from 11am until the dinner rush slows down (7:30-8 right now). I say “typically” because they sometimes cater events, and thus won’t be in the parking lot. The owner did say they will be moving 1,000 feet west in the near future, but wasn’t specific about when. I believe it is cash only, so come prepared.
*Update* For those of you itching to go tonight or tomorrow night (3/25-3/26), don’t. They are catering an event and will not be there! word is they are helping with the Children’s Miracle Network fundraiser at Cox South, so stop by for a dinner and help a great cause. No word on times – sorry.

@Jennie – Well, as stated, I eat at taco stands in Mexico, so one in the States doesn’t concern me too much. I snuck some peeks inside and saw all stainless steel equipment, like any other commercial kitchen, so I feel as confident about the safeness of the food there as any other hole in the wall. Maybe it’s my version of walking on the wild side

The Taco Wagon is owned and run by brothers who have much more concern for your health than the teenagers at Taco Bell do. I’ve eaten there several times and they’ve catered at my office twice. They are subject to health department inspections, just like any other restaurant. I feed my young children there before I’d take them to McDonalds. And oh yeah, they’re crazy delicious!

Ate at the Taco Wagon today and was a bit disappointed. I ordered one each of the steak, chicken, and pork tacos with cheese and sour cream. Although I was the only one there I waited between 10-15 minutes which I thought was a little long. The flavor of the meat was overpowered in each instance by the onions which had that strong, leftover-from-yesterday sharpness to them. Another issue was that they left off my cheese and sour cream. Now, granted, I didn’t notice it until I had already driven away but, again, I was the only customer so it’s not like they were so swamped it explained an oversight like this. That kind of inattention to detail makes a big difference to me.
One other note, although is strictly a personal preference, is that I didn’t care for the corn tortillas. I usually don’t unless they are a wrapping for something that is then fried but I thought I would give them a try. This is not a negative against the Taco Wagon. It’s how they serve them and I knew that going in. It’s just a head’s up for anyone like me…if you don’t like corn tortillas as a rule, you won’t like these either.
I’m certainly going to give the Taco Wagon another try when I’m out that way again. The quesadilla sounds pretty good for next time. Either way I love the ingenuity of the folks who make their living selling food out of wagons like this. It’s always an adventure to sample their fare.

I went there today! My pork taco was good, my shrimp taco tasted good, but since there was maybe 2 pieces of shrimp involved I wasn’t thrilled. The tamale I had was fair. Tamale King makes fantastic tamales and their tacos, heck!, everything is better than this place. I will go back to the Taco Wagon for some things, when I am on that side of Springfield. Otherwise I will go back to the Tamale King or Purple Burrito

I tried the Taco Wagon just last week for the second time. While I did like the tacos very much the wait is far to long for a lunch break. I was told that they ran of of cheese I do understand that this will happen from time to time but for such a small place it seems that the person in charge of the stocking is not very good. I know that very same thing is what put them in a state of chaos at Cox. I hope that they are able to work out the kinks in the system. The product is good very good its the management the is lacking. If I were there for a speedy meal it would not work at all, I and my boyfriend do plan on giving it a try for the big old burritos we just need to make sure it not when we are in a hurry. Simply the best, most fresh, authentic Mexican food in Springfield. The pork is fantastic and the tacos ROCK! I would suggest this to anybdy who likes real, fresh food!

TACO WAGON RULEZ! The pork taco’s were good but I think the beef tacos had more flavor! My brother told me 417 Magazine did a story on this place and they are openining a second location at CVS pharmacy on Glenstone! I hope so it’s closer to my place!!

This place is AWESOME!! They cater to our office & NEVER fail to please us all! I would recommend this place to anyone wanting to experience a little piece of Mexico/California!
